Cooking queen!

This weekend was so nice to have nothing required of us (weddings, birthday parties, showers) etc. except of course report cards and house work. I was in the mood to cook for some reason so I looked at my Pinterest account and saw all the delicious recipes I had pinned and never made. I made 4 different recipes. 
Recipe # 1
 I was craving something lemony for some reason. When I was not pregnant I was not a huge lemon anything fan. But they say when you are pregnant you crave things you wouldn't normally, so I set out to make lemon bars. I found a delicious looking recipe on mix and match mama. This mom has 3 blogs- cooking, family, and travel. She has many recipes for Neiman Marcus bars which I had never heard of before. She had a recipe for lemon Neiman Marcus. They looked delicious!

Here is the finished product. I made the mistake of calling my mom while these were in the oven and talking to her outside on my back porch. I think I over cooked them a bit but they were yummy! I'm gong to take the rest to my 2nd graders for their last week of school.

Recipe # 2
Another recipe I had been wanting to try from my Piniterest board was this hot spinach queso dip. One of the only restaurants in our little suburb is the Rusty Bucket. We eat there way too much! They have the best queso spinach dip. I tried to replicate but was not successful! 

It was not as good as I expected.  I'm not sure why, but it came out way too thick. Maybe next time add more salsa or a can of rotel? Or maybe since I am pregnant it just didn't hit the spot. Good news is Rob liked it a lot! 

Recipe # 3 
Another recipe I found on my Pinterest board was a skinny taco bake. 

Here's what mine looked like with the lemon bars in the background. 



Doesn't that sound delicious? It definitely was! We are eating leftovers until its gone! 

Recipe # 4
For the last several weeks I have been craving potato soup! I've had it at panera- yummy! I've had it from a can- yuck! I've made it with a mix- tasted ok. I decided I wanted to make it good ol old fashioned homemade! I found lots of recipes online and decided on this one:
Except instead of cream of cheddar soup I decided on cream of celery soup. I also skipped the scallions. I accidentally put the sour cream in with the rest of the ingredients instead of reading ahead and putting it in at the end. It didn't dissolve very well but it didn't affect the taste. It looks greasy but it's not at all. That is just the butter rising to the top. It is delicious!!!! 


Oh by the way I used my crockpot which is the best crockpot in the world! You can sauté and cook food first then set it to cook on many settings. We registered for it for our wedding at Williams-Sonoma if you want to check it out.
